Shortly after USS Voyager was swept into the Delta Quadrant in 2371, Paris creates a holodeck re-creation of Chez Sandrine. The computer program designation is "Paris-3", and the first of the ship's crew to be taken there by Paris is his increasingly close friend Harry Kim, whom he tells: "I always had a thing about the French." [#6 The Cloud] The real Chez Sandrine is a wharf-side bistro, owned by a woman named Sandrine, in the city of Marseilles in France on Earth. Marseilles is in the south-east of France, on the coast of the Mediterranean Sea.

Paris tells Kim that he discovered Chez Sandrine when he had his pocket picked in Marseilles. When Kim is shocked that such crime occurs on Earth (where there is meant to be no crime), Paris assures him, saying the local thieves do it for the tourists and return the pickings.....most of the time. The bistro has been in Sandrine's family for over 600 years, calculating from 2371. When he was a cadet at Starfleet Academy, Paris chose the Starfleet base outside Marseilles for physical training in his second semester. He spent most of his time that semester at Chez Sandrine. [#6 The Cloud] The fact that he spent most of his time at Chez Sandrine during that period is a fact that the Doctor comments on disapprovingly to Seven in [#116 Someone To Watch Over Me]: "....no doubt to the detriment of his scholastic performance." The table at Sandrine's in Marseilles has attracted the world's greatest hustlers throughout the century (when he says this, Paris does not mention which century). The real Chez Sandrine is seen, or rather the version of it which exists in an alternate reality, in early 2372, in [#22 Non Sequitur], and there Harry Kim finds an alternate reality Tom Paris playing pool.

The holoprogram Chez Sandrine has features not in the original Chez Sandrine, such as Ricky, a beautiful holo-woman attracted to Paris. He tells Kim he includes in all his programs, although the television viewer sees her only in [#6 The Cloud] and [#32 Meld]. |

| There are also holographic representations of great pool players of the past such as Gaunt Gary from Earth's mid-20th century. He is seen in [#6 The Cloud], [#15 Jetrel] and [#19 Twisted]. Re-creations of other great pool players are, however, not identified and are not major holocharacters; it is possible that one or more of the holocharacters seen playing pool with hologram Gaunt Gary might be one of those re-created great pool players. |

| Tom Paris picks the security lock on Harry Kim's door, enters and wakes his friend late at night to introduce him to the Chez Sandrine holoprogram, and TOSTFF infers and presumes that Paris has just finished creating it, which seems a plausible reason for waking Kim if Paris has just completed the programming and is eager to share it with his new close friend. Kim, and thus the television viewer, is introduced to the new holoprogram also learning why Paris created it and which real place he based it on, as follows: | ![]() [#6 The Cloud] |

Paris, as he and Kim stand at the holodeck controls on the wall-mounted interface just outside the holodeck: "Computer, activate holodeck program Paris-3." The holodeck doors open and Paris waves Kim inside. They enter the Holodeck and find themselves outside a night club called Chez Sandrine, Marseilles, Earth. A jolly, laughing alien comes out as they approach the entrance. The first sight to greet them as they enter is the bar's pool table which takes up a prominent position almost in the middle of the place. Several of the holographic customers are clustered around the pool table, in mid-game. As Kim and Paris enter, everyone there (who are all holocharacters) greet Paris warmly. "Hey, Tom!" "Hey, Tom, how're you doing?"
Holo-Sandrine welcomes Paris with a kiss and a close embrace. Holo-Ricky embraces and kisses him, and he introduces her to Kim: "This is Ricky. I include her in all my holoprograms." Holo-Ricky complains to Paris. "Your friend the gigolo wouldn't leave me alone." Holo-Gigolo to Paris, apologetically. "It's what I do, Tom. Nothing personal." Paris describes the holo-Gigolo to Kim: "French father, Daliwakan mother." |
