In [#116 Someone To Watch Over Me], Chez Sandrine is the destination of choice when the Doctor encourages Seven to explore the rituals of human courtship. He gets her to let her hair down (literally) though in fact he is the one who undoes her hair and, following his social lesson 'Lesson 8: Dress for success' he picks out a suitable garment. She enters the holoprogram to find that Chapman is waiting for her at the bar counter, wondering if she will turn up, suspecting that one of his friends put her up to asking him out for dinner. They both experience shyness and awkwardness on first meeting each other in a romantic date situation, and these feelings of discomfort continue throughout their evening together. Chapman escorts Seven to what he refers to as the "best table in the house".

There seems to be a replicator in both the real and the holographic Chez Sandrine (see screenshots below), though it differs a bit in appearance to the replicators on Voyager. I believe it is less plausible that the one located not behind the bar is a juke-box, as there is the holographic accordion-player to provide music and a juke-box does not seem to correspond with the setting of the holoprogram, but there is nothing in the series to indicate which or if it is another piece of equipment altogether. Its location behind the bar in the picture below left supports replicator or juke-box, whilst its location in the below right picture adds weight to it being a juke-box since, in the real Chez Sandrine at least, it is likely that the replication of food or drink would be restricted to bar staff on behalf of customers. However, since money is not in use on Earth (by humans anyway) in the 24th century, having such a restriction would not be in order to prevent customers getting free drinks or food and thereby deprive the establishment of money but possibly, and this is speculation, to control power usage.

The birthday cake that Neelix presents to Kes to help celebrate her second birthday was made by him and not produced in the holoprogram, [#19 Twisted].
The bar serves a variety of drinks including synthehol. Synthehol is an alcoholic substitute invented by the Ferengi which permits one to have the intoxicating effects of alcoholic beverages without the deleterious consequences, assuming that, unlike Kadi ambassador Tomin in [#116 Someone To Watch Over Me], the appropriate enzymes are present in one's bloodstream.

Synthehol is mentioned in earlier Star Trek, in [TNG: Family] and [TNG: Relics], as well as in [Voyager]. In [#116 Someone To Watch Over Me], when offered champagne Seven informs her date, William Chapman: "Synthehol impairs my cortical function. Water will suffice." She first learned the hard way about synthehol's effects on her at a champagne celebration in [#100 Timeless]. The bar also serves holographic wine, and Paris reassures Kim on the matter of alcohol:

As well as drink and hot beverages such as coffee (Neelix orders "coffee, black" for Tomin to try and sober him up rapidly, in [#116 Someone To Watch Over Me]), food is also served. In [#45 The Chute], while incarcerated in an Akritirian prison hell-hole, Paris and Kim fantasise about wonderful food dishes they would like to eat, and even Neelix's leola root stew. Their conversation indicates that the real Chez Sandrine serves not only food but certain delicacies, and it is likely that Paris incorporated this aspect in his re-creation of the holoscenario.

Paris: "OK. OK, concentrate on this - crown roast of lamb, with a bed of wild rice, and a 2296 Chateau Lafitte Rothschild at the real Sandrine's." Kim: "Or how about shrimp with fettran sauce, flambé noodles and fudge ripple pudding." Paris: "Good one. OK. A couple of barbecued T-bone steaks with baked Risan beans and cherry pie for dessert. Let's see you top that one." Kim: "Right now, I'm so hungry I could eat a bowl of Neelix's leola root stew." Paris: "Me too. Never thought I'd say that." [#45 The Chute] |
