He explains to Kim how he first found the real Chez Sandrine and spent much of a semester there while he was at Starfleet Academy. Holocharacters encountered by the main crew include Sandrine, Gaunt Gary, Ricky and the Gigolo. The Voyager crew are introduced to the game of pool, and Janeway surprisingly proves to be a seasoned player.

During the game the pool term "safety (shot)" is used and it is learned that the pool table "rolls a little to the east".

The occasion proves a disaster as Dalby discovers what Tuvok is trying to do and bluntly tells him he does not wish to know him.

This is actually part of Tom Paris' acting like a malcontent over a period of time in order to provide a plausible reason for him to leave Voyager and be taken aboard a Kazon-Nistrim vessel in the hope of uncovering the traitor on Voyager.

They enjoy the companionship they share there. The Doctor later visits there to confide in Tom Paris and ask his advice as he (the Doctor) is falling in love with Danara. After a disastrous moment when the Doctor surprises her by matter-of-factly declaring his feelings so that her instinct is to reject him, Tom Paris and Kes connive to get the couple to spend time together. In the Chez Sandrine holoprogram, Paris tells the Doctor he knows just the holoprogram, and later Danara and the Doctor share a romantic date in another of Paris' holoprogram, this time a parked 1957 Chevy on Mars. The Doctor adds a subroutine to his program to enable him to dance, and he shares a long intimate dance with Danara after she returns to her phage-ridden body. In [#116 Someone To Watch Over Me], the Doctor dances again, with Seven, again in the Chez Sandrine holoprogram.

Click cue ball for illustrated episode excerpt.In [#40 Tuvix], after a transporter malfunction fuses Tuvok and Neelix together to create a hybrid being who takes the name Tuvix, Kes becomes confused about her romantic feelings, wondering how she can love Tuvix who is only partly the Neelix she knows and loves. In the Chez Sandrine holoprogram she sets some relationship distance between herself and Tuvix.

He re-creates a famous historical diva in holographic form but is irritated by her extreme vanity and they fail to complete a duet, the aria 'O Soave fanciulla' from Puccini's opera 'La Boheme'. The Doctor suddenly forgets the words and is berated by the diva. He is interrupted by being called away to treat emergency patients.

Click cue ball for illustrated episode excerpt.In [#116 Someone To Watch Over Me], the Chez Sandrine holoprogram is the scene for the Doctor's attempt to teach Seven how to date and express herself romantically. Leading on from that, it is the scene of her first date, with structural engineer Lieutenant William Chapman, an event which proves disastrous with neither Seven nor Chapman feeling at ease with each other and ending up with him acquiring a torn ligament in his shoulder. The Doctor, there as an observer and taking the role of piano player, diagnoses the torn ligament and orders Chapman away to Sickbay. The evening turns into a success for both the Doctor and Seven as they share a relaxing dance (see note about dancing above under [#35 Lifesigns]). However, the Doctor discovers that his burgeoning romantic feelings for Seven are not reciprocated and he tries to console himself by visiting the Chez Sandrine holoprogram alone and playing on the piano there the end part of a song, the episode's name being the title of that song.
